I'm a North Indian and married to a South Indian. And that too a staunch lover of Idli.
This is what he says when you ask him about his world 's most favorite food.
"What about people who first order two pristine white idli's before ordering their dosa?
They then proceed to pour melted ghee on top of the idlis
And gently caress the ghee into the oh-so-soft and absorbent skin
Then gently break one-third of the idli to let escape a deep sigh of steam
You then weigh your options of what deliciousness you want to anoint it with: a. Coconut chutney b. Red tomato chutney c. Coriander chutney or D. Dunk it in the aromatic sambhar
The stickler to tradition will start with option a and then proceed with the next piece to option d.
Then the third piece goes into option b and then again the trip to sambarapuri...
And so on and so on...
The journey does not end there
By this time, you realize that you have reached 50% of the journey... One perfect mound has been delicately dealt with.
You look at your depleted supplies of dips and especially the option d that is now at 10%.
You seek out the waiter and wish to make eye contact all the while making sure your plate is respectable and dignified despite your intense ritual
Finally, the waiter recognizes the truly pious devotee and brings a piping hot cup of sambar
And then exactly in the same order, you pay homage to the other perfect circle of happiness
By this time, the gods are so pleased, that your cheeks are flushed, emotions are running down the sides of your face in liquid form, and you raise your head and sigh in deep contentment".

Here in the frame you are seeing the south Indian goodness.. Wholesome, simple, fresh hearty meal.
Idli's served with piping hot sambar, accompanied with homemade peanut chutney and homemade ginger pickle with a drizzle of ghee and a spoonful of Kura karam podi.
