Tiramisu

A very popular Italian dessert Tiramisu literally means "pick me up" or "cheer me up".

This is a no bake dessert and is incredibly easy to make. Made with ladyfingers soaked in rich expresso, layered with sweet and creamy mascarpone cheese & coffee liqueur with sinful dose of heavy whipped cream, egg yolks, sugar and finally topped with the dust of unsweetened cocoa powder, this dessert undoubtedly is beloved to the hearts of many.







Here's how these are made.



Ingredients:


  1. Lady Fingers - 25-30



Dipping Sauce


  1. 1/2 cup rum or Irish cream.

  2. 1.5 cups Expresso or coffee



For Layering


  1. 450 grams of Mascarpone Cheese

  2. 60ml - rum or Irish cream

  3. 2/3 cup or 135 grams of Sugar

  4. 2 cups or 480ml - heavy whipping cream

  5. 2 teaspoons of vanilla extract

  6. 6 egg yolks


For Topping


  1. 1/3 cup or 45 grams of unsweetened cocoa powder.


Baking Tools


  1. 7x11 inch or 9x13 inch oven safe baking dish

  2. Hand mixer or stand mixer

  3. Spatulas

  4. Bowls



Method:


There are three stages to this beautiful recipe. First, we need to prepare dipping sauce for the ladyfingers. Second, making the filing for layering on the ladyfingers. Finally, the topping of cocoa powder.


Let's begin.


For Dipping sauce


  • Take the rum and the expresso and combine together in a bowl and set it aside.


For Layering


  • In a thick bottom glass bowl, add the eggs and the sugar. With the help of a hand mixer, whisk together. Place this glass bowl on a pot of simmering water. Make sure the water does not touch the bottom of the bowl. Now gently whisk the mixture with the help of the hand mixer over heat until the sugar dissolves completely and the mixture has thickened and turned light yellow in color. At this stage, remove the mixture and set it aside and allow the mixture to cool.



  • In a separate bowl, add the mascarpone cheese, rum and mix together until well combined. You can use hand mixer here. Set it aside.



  • In a separate bowl, add the whipped cream and the vanilla extract. With the help of a hand mixer, start whisking the mixture at low speed for about 30 seconds. Slowly increase the the speed and beat until stiff peaks are formed. Once the peaks are formed, stop whisking and set this mixture aside.



  • Now pour the egg mixture to the mascarpone cheese mixture and combine well. You could use the hand mixer.

  • Once the egg mixture and the mascarpone cheese mixture are well combined, it's time for the whipped cream mixture to be folded in. With the help of an spatula, gently fold the whipped cream mixture in to the mascarpone cheese mixture. Done.

  • The filing for the layering is done.



Assembly


  • Take the ladyfingers one by one and dip them in the dipping sauce. Quickly remove them from the dipping sauce like in two seconds. We just want to ladyfingers to be coated and not soaked.

  • Line the ladyfingers on your dish tightly making sure no gaps are visible. Your bottom layer is now ready.



  • Now, add half of the mascarpone cheese mixture on top of the ladyfingers. Smooth out the edges with the help of a rubber spatula.

  • Repeat the process of dipping the ladyfingers in the dipping sauce and place them on the mascarpone cheese bed fully covering the space without any gaps.

  • Layer the ladyfingers again with the remaining mascarpone cheese mixture.



  • Smooth out the edges and give it a clean look from all sides.

  • Finally, once the assembly is done, dust the top with cocoa powder gently. Clean the sides with paper towel.

  • Woah.... Your Tiramisu is done. Allow it to chill in the refrigerator for at least six over hours or for best results chill it overnight.


There you go. The delicious and creamy Tiramisu is ready to be served.



You could make tiramisu a day or two in advance and enjoy upto a week's time in your refrigerator.
